Serves: 12 bags apple mulling spice mix (each will spice a 750 ml bottle of red wine - 3 ¼cups wine or ½ gallon - 8 cups apple cider or apple tea)

Ingredients
- ¼ cup cardamom pods
- ⅓ cup cinnamon pieces
- ⅓ cup orange peel, dried and chopped
- ⅓ cup lemon peel, dried and chopped
- ¼ cup whole allspice
- ¼ cup whole cloves
- 2 tablespoons nutmeg pieces
- 2 tablespoons ginger root, dried and finely chopped
Instructions
- Place cardamom pods into a thick plastic or cloth bag and hit with a mallet or heavy rolling pin to break into pieces. If done in a food processor, do not grind too finely.
- In a medium size bowl, combine cardamom with the rest of the ingredients and mix well.
- Place ¼ cup of mixture into cotton drawstring bags.
- Store mulling bags in a sealable glass jar.
Notes
This recipe makes about 3 cups, which is enough mulling spice for several recipes.
VARIATIONS
To Make Mulled Tea
Combine 8 cups water, 4 apple flavored tea bags, 4 tablespoons whole leaf stevia, and one spice bag in a crock pot or large pot on the stove. Simmer on medium low for 30-40 minutes or until hot. Remove spice bag and discard. Serve hot.
To Make Mulled Faux Cider
Combine 1 2-liter bottle of sugar-free apple soda with 1 spice bag in a crock pot or large pot on the stove. Simmer on medium low for 30-40 minutes or until hot. Remove spice bag and discard. Serve hot.
To Make Mulled Apple Cider
Combine ½ gallon apple cider and 1 spice bag in a crock pot or a large pot on the stove. Simmer on medium low for 30-40 minutes or until hot. Remove spice bag and discard. Serve hot.
To Make Mulled Wine
Combine 5 tablespoons whole leaf stevia and ½ cup water in a large pot on medium heat. Stir until stevia is dissolved. Add 750 ml of red wine and 1 spice bag. Reduce heat to low and heat until wine is hot. Remove spice bag and discard. Serve hot.
VARIATIONS
